So hey, we are Arboloco, a new restaurant a stones throw (with a good arm) from Paunch/Tiger Tail Beach on Isla Colon in Bocas del Toro, Panama.
A lot of you know us, a lot of know you don’t. We are Clem & Stacey, two mad freaks!
We aren’t mad at the world, we certainly are not mad at you, but we are in fact mad about all things natural, simple and good. With this in mind we came to be. Dreamed, designed and built by just the two of us, over the past 18 months.
We do we call ourselves mad freaks?
I will explain…
To begin, we landscaped our project first, before any construction. (Who would do that, but mad freaks!?)
Secondly, we spent many weeks across the country re-cycling and hand cutting over 1,500 car tires deemed for the landfill, into roof shingles (or honestly, Clem cut over 1,500 tires – I cut three or four until my hand hurt!
Third, we built a beautiful 8 ft tall clay oven just to look at it (cooks nothing)!
Arboloco is full of natural materials and recycled madness. Some folks like the trendy word up cycled. Clem and I are OK with calling it old shit.
Our madness came from many sources – most here in Panama.
To search for these, to us, treasures, we spent months exploring the country in our 25-year-old pick up with the hopeful name of Old Faithful. The name didn’t catch. The many auto parts stores and mechanics across the country thank us for our support.
So enough about us and how Arboloco came to be. Let’s talk about food!
Our menu is Afro-Caribbean, our meats, fish and seafood are cooked on charcoal. Sides, salads, sandwiches and desserts are packed with fresh, local ingredients and seasoned with flavors of the Caribbean.

You can find good food Thursday-Sunday, 4-9pm.
We are closed Monday, Tuesday & Wednesday
